Akkeshi Seimei Single Malt Japanese Whisky 700ml 55% abv
 
This stunning release is one of Akkeshi’s peated iterations, a style which will no doubt be key in the future of the distillery.  Predominantly bourbon casks but also some Mizunara, wine and sherry casks with a mixture of both peated and unpeated.   One of the most incredible of the releases yet this whisky has enough peat to please fans of traditional style peated whiskies whilst simultaneously appealing to those encased more by delicate and subtle nuances.  
 
 Nose: A wonderful nose, at the start you’re greeted with caramel fudge, nougat and Anzac biscuits.  Behind is a more treacle sweetness of leatherwood honey with notes of polished pine.  Left for a moment deeper umami notes like soy sauce also start to peak  through as well. 
 
 Palate:  a perfectly harmonious balance of peat in the spirit, at the start there is a bright citrus note reminiscent of lemon sorbet.  The sweetness is there as well with green toffee apple and wine gums.  The palate finishes with notes of black forest cake, red berries with the intricate peat always lingering around. 
 
 Finish:  Lengthy finish with lots of citrus at first moving to beautiful lingering milk chocolate, tapering out to ginger and noble spice.
